Description
Vineyard
The Friulano “Biotipo Giallo” vines were planted in 1926, on a sandy ground enriched by about 15% of stones. This terroir promotes excellent drainage and contributes to give the wine its typical minerality and structure.
Harvest
The harvest is late, between the end of September and the beginning of October, and is carried out exclusively by hand. The process takes place in several steps, during which not only the bunches are selected but sometimes also the individual berries. Only those completely infused by Botrytis Cinerea are harvested, since a not well developed or excessively evolved mould would compromise the typical aromatic profile of “botritizated” wines. This meticulous process can take several weeks.
Vinification and ageing
After soft pressing, the must is fermented and then aged for about a year and a half in oak barrels aged five years. The percentage of grapes affected by Botrytis varies depending on the climatic conditions of the vintage, making each production unique and unrepeatable. In fact, due to weather conditions, the production of this wine is not always possible.
